Some (but not all) of our recipe kits call for extended aging, dry hops, or additions of oak cubes or fruit purees after fermentation is complete but before the beer is bottled - this is where a 5-gallon secondary fermentor comes in. Better clarity, less sediment in the bottle, and a smoother overall flavor are fringe benefits. Plus, more carboys means you can brew more beer - everybody wins! Glass carboys are impermeable and can withstand more rigorous cleaning than plastic carboys. The 5-gallon size minimizes headspace to help reduce the chance of oxidation in your homebrew.
